For 40 years, Sergio’s recipe never left Chicago—it was shared quietly among locals who knew where to find it. In 2019, we perfected a method to freeze it at peak flavor. Today, every pie is handmade in River North and shipped nationwide—ready in under an hour.

1983: The Beginning

In a small kitchen in Chicago, Sergio Rupiani set out to build the perfect deep dish. Not for tourists. Not for grocery shelves. Not for mass production.

Pressed by hand. Sauce simmered low and slow. Layered with intention.

It became an insider legend—the kind of pizza you only knew about if someone brought you to the table.

2019: We Cracked the Shipping Problem

For decades, real deep dish didn’t travel. Ship it, and you compromise the crust. Freeze it, and you lose the soul.

So we rebuilt the process from the ground up. After years of refinement, we engineered a method to preserve deep dish exactly as it was meant to be—bold, structured, unapologetic.

Meet Sergio Rupiani—the man behind the standard.

My grandfather was Sergio Rupiani.

He was born in 1912, in St. Gallen, Switzerland, and raised in Torino, Italy—into a family where art wasn’t optional. It was the air they breathed.

His father was a composer. His mother, a musician. Discipline came early.

By seven, he was training daily—violin, piano, and voice. Not because he had to. Because he couldn’t ignore it.

By his twenties, he was performing across Italy and Europe—La Scala in Milan, Teatro Regio in Torino.

Then World War II began. At 27, he was ordered to fight. He refused. Wouldn’t carry a weapon. Instead, he sang for the troops.

When the war ended, a Milan newspaper wrote that “the next Caruso was born.” His name—Sergio Rupiani—printed in bold.

He was offered a contract in the United States—a chance at something bigger. He turned it down. He regretted that decision for the rest of his life.

Years later, he found his way to the Midwest. It became his second home. It’s where I was born and raised—and where I came to know him.

And this time, he didn’t miss. He brought the same obsession and discipline he had for music—and applied it to Chicago deep dish pizza. He didn’t replicate it. He perfected it. Pressing every crust by hand. Balancing every layer. Simmering his sauce until it was exactly right. Not good. Not close. Exact.

Today, we don’t recreate that experience— we preserve it. Every Rupiani’s® pizza is built on his standards, his discipline, and his refusal to compromise. This isn’t just pizza. It’s his legacy—served exactly as it was meant to be.
